Blueberry super pancakes

These pancakes are easily the best I've ever tasted. Especially if you top them with powdered sugar, margarine, and a squeeze of lemon. Really, these are bed-and-breakfast good! I added a few extra goodies, so they are healthy (aka "super") too.

Blueberry Super Pancakes
  • 1 cup of whole wheat flour
  • 1/2 cup all-purpose flour (or more whole wheat)
  • 1 1/2 tsp baking powder
  • 1 1/2 cups non-dairy milk (I used unsweetened coconut)
  • 2 tbsp ground flaxseeds
  • 3 tbsp hemp (or sunflower) seeds
  • 1 tsp vanilla
  • 1/4 tsp almond extract
  • 2 tbsp maple syrup
  • 2 tbsp oil (canola, coconut, etc.- your choice)
  • 1/4 tsp cinnamon
  • 1/2 cup blueberries (if using frozen, defrost them in a strainer under warm water)
  1. Preheat your griddle over medium heat. Combine the flours and baking powder in a medium bowl. Set aside.
  2. Place all remaining ingredients, except for the blueberries in a blender and blend until smooth. Pour the wet ingredients over the flour mixture and stir to combine. Some small lumps are ok- you don't want to over-mix the batter or the pancakes will be tough. Fold in the blueberries.
  3. Cook on a heated griddle, flipping when the edges are bubbly.
To serve, spread margarine (I use Earth Balance) on top of warm pancakes, dust with powdered sugar, and squeeze a bit of lemon juice over the top.

is there anything i can use in place of the hemp/ sunflower seeds? do they serve any function for the 'rising' of the pancakes? can i omit them? thanks!c

@Mystique- yes, you can omit the seeds. They are there for protein and iron but don't serve a functional purpose! :-)

So this is my first week attempting vegan and I was so excited to make these..the batter was like paste and not liquid...terrible disappoinment...any idea what I did wrong???

@"anonymous"- You may have over-mixed the batter (over-mixing can make it gummy and leads to rubbery/tough pancakes). If your baking powder isn't fresh, it may not give the batter the fluffy factor. Also, you could add a little more non-dairy milk.

these were fantastic!!!!!!!!!!!! thank you for sharing!!!!!
the only thing i changed was i didnt use a blender (i didnt use sunflower seeds so i deemed it uncessecary), and instead of 2 tbs of maple syrup, i used 1 tbs of agave and used the other tbs (of agave) as syrup for the end product! awesome!
